Giant couscous salad with paprika & basil

Sometimes you just need a go-to recipe for a quick, healthy and hearty salad. This giant couscous salad can be rustled up in about 20 minutes. The combination of chunky couscous, fresh vegetables and smoky paprika makes a delightful main or side dish.

Ingredients

(serves 4)

Salad

Giant couscous 200g, cooked

Cucumber 1, cubed

Cherry tomatoes 2 handfuls, halved

Lamb's lettuce 2 handfuls

Basil handful

Parmesan or feta a good grating or crumbling

Slivered almonds handful

Dressing

Extra virgin olive oil 1/3 cup

Apple cider vinegar 2 tbsp

Wholegrain mustard 1 tsp

Smoked paprika 1 - 2 tsp

Salt & pepper sprinkle

How to cook

Simply throw all the ingredients into a large salad bowl, saving the almonds and parmesan/feta to scatter on top. Mix the dressing ingredients together in a sealed jar and shake well. Drizzle over the salad and feast.
