Especially during the summer, home-made dip makes the perfect snack or addition to your picnic. This healthy beetroot hummus dip is one of our favourites and creates a fantastic colour too.
Chickpeas 1 can, drained and rinsed
Cooked beetroot 2
Garlic 2 cloves
Tahini 2 tbsp
Extra virgin olive oil 1/4 cup
Juice of lemon 1/2
Lemon zest 1, for garnish
Salt and pepper pinch
Water 2-4 tbsp (optional)
How to make
Simply place all of the ingredients in a food processor and blitz until you get a smooth texture. If the consistency is too thick, add a few tablespoons of water or an extra dash of olive oil if preferred.
Serve in a bowl alongside carrot, cucumber or pepper slices as a light snack. This is also delicious served with warm bread, crackers or salad (such as this giant couscous salad).
Don't forget to garnish with lemon zest as a finishing touch. Enjoy!
