Pad ki mow

This one pays homage to the Thai roots of one half of The Honest Cooks - spicy pork noodles with lime leaves. We added a courgette and spring onion to the original recipe, from Vatcharin Bhumichitr (Stylish Thai In Minutes)

Pad ki mow

(Serves 2-4)

Oil 1 tbsp

Garlic clove 1, finely chopped

Red or green chillies 2

Lean pork 110g, thinly sliced

Fish sauce 1 tbsp

Dark soy sauce 1 tbsp

Sugar 1 tsp

Kaffir lime leaf 1, finely chopped

Tomato 1, chopped

Courgette 1, finely sliced

Spring onion 1/2 finely chopped

Soaked sen yai noodles or rice noodles 110g (dry weight), rinsed and separated

Coriander 1 spring, coarsely chopped for garnish

How to cook

In a wok or frying pan, heat the oil and fry the garlic until golden brown. Add the chillies and stir for a couple of seconds, then add the pork and stir well. In succession, add the fish sauce, soy sauce, sugar and Kaffir lime leaf, stirring quickly as each goes in.

Add the tomato, stir until cooked and then add the noodles. Stir briefly until cooked through. Serve up and garnish with the coriander.
